When serving buffet-style meals, use warming trays, slow cookers, or chafing dishes to maintain hot food temperatures. Why is this important? Foods that linger in the “danger zone” (40°F–140°F) for too long can become a breeding ground for bacteria like Salmonella or E. coli. If you’re unsure about how long a dish has been sitting out, the two-hour rule is a good guideline: if it’s been more than two hours at room temperature, it’s time to toss it.
